This is a delicious pumpkin soup with added quinoa and a touch of cream to boost the Nutrition and protein content. Dont worry if you are not a quinoa fan, you wont even notice it!!
Ingredients:
1Kg Pumpkin cubed ( approx)
2 Celery Sticks sliced
2 Garlic Cloves crushed
1 Tbsp Butter
1 Tbsp Extra Virgin Olive Oil
2 to 3 cups Vegetable Stock
1/4 cup Quinoa
1/4 tsp Smokey Paprika
1/2 tsp Cumin
1/4 cup Cream (or Creme Fraiche, Sour Cream, Mascarpone)
1/2 a Lemon
Fresh Parsley to garnish
Method
Put the cubed pumpkin, celery, garlic olive oil and butter into a large pot. Cover with vegetable stock and bring to the boil. Add quinoa, paprika, cumin, lemon juice and cream. Simmer until pumpkin is soft. Add extra stock if you need to.
Use a potato masher to mash pumpkin pieces into the soup until it is thick and smooth. Add salt, pepper and parsley to taste. Delicious topped with toasted walnuts.
