The gelatin provides amino acids that help support the structure of the gut and feed the good bacteria in the intestinal tract. This is good news for our gut health and immunity and a great alternative if you have not managed to get into bone broth or collagen powders.
Equipment:
Syringe
Silicon mould
You can buy these from a cake shop.
Ingredients
There are many different combinations you can try. But this is what we made this week.
1.5 Tbsp Gelatin
1 cup Frozen raspberries
1/2 cup Coconut water
Method:
Defrost the raspberries and purée them in a blender.
Strain the berries through a sieve to remove the seeds. You need to end up with about 1/2 cup of berry juice.
Place the berry juice, coconut water and gelatin in a saucepan. Heat on low, stirring until combined then simmer for another 5 minutes to let it thicken but do not boil.
Pour into moulds and leave to set in the freezer for 15-30 minutes. Then store in an air tight container in the fridge.
