Zesty Green Salad

The dark green colour of spinach, kale and some varieties of lettuce indicate they are packed with antioxidants and vitamins to keep you looking and feeling great. Try to eat a good serving of green leafy veges every day.

This simple green salad with coriander and lemon zest is delicious served with white fish and new potatoes.

Ingredients:

2 handfuls of Baby Spinach Leaves per plate

Coriander

Sugar Snap Peas

The juice of 1 lemon

The zest of 1 lemon

A drizzle of extra virgin olive oil
